Under pressure for years thanks to discount retailers, e-commerce and other forces, convenience stores are evolving. Some regional players and start-ups have improved food service, changed product selection and even store design, creating loyal customers bases. A few convenience chains have attracted venture capitalist funding as they become “restaurants-to-go” with gourmet offerings, dining areas and free WiFi for customers. Is this a trend that could take off in Canada?
